In the heart of Madrid, Benares invites you to live an incomparable experience through our tasting menu, which is designed with care and creativity. The best thing is that each dish transports you to a different corner of India, with fresh ingredients and techniques that are reinvented with a contemporary touch.
Each step of the menu is designed to surprise and excite you, making this an experience that delights the palate, awakens the senses and connects with the cultural richness of India. Do you dare to discover it?
The journey begins with a bite that awakens the senses, our delicious tikka masala croquettes accompanied by a green chili chutney. This first step is an explosion of flavors that combines the creaminess of the croquette with the fresh and slightly spicy touch of the chutney.
The croquette, a format so familiar in Spanish gastronomy, is transformed here into a tribute to the spicy flavors of India, as the tikka masala, with its mixture of spices and its enveloping texture, finds in the green chili chutney a refreshing contrast that balances the dish.
To accompany this dish, the Maturana Blanca from the D.O.Ca Rioja is the ideal ally, as its fruity notes and balanced acidity cleanse the palate and prepare you for what is to come.
The second step takes us to the ocean with a Guillardeau oyster , accompanied by green apple, ginger chutney, pickles and sweet peppers; this dish is a tribute to freshness and balance of flavors. Where each ingredient contributes a nuance that together, create an experience more than a flavor.
The oyster, with its delicate texture and sea flavor, is enhanced by the acidity of the green apple and the spicy touch of the ginger. On the other hand, the gherkins and fresh peppers add a crunchy contrast that completes the experience. It is a dish that invites you to close your eyes and let yourself be carried away by the sea breeze, while the ginger and apple give an exotic touch that will take you to the shores of India.
To accompany these oysters there is nothing better than Can Verdura Supernova Blanc, a 100% Moll Mallorcan wine, which adds an extra dimension. Its mineral character and citrus notes enhance the delicacy of the oyster, creating a perfect harmony.
The samosa, which is a classic of Indian cuisine, is reinvented in this third step. Filled with mashed potatoes and yellow pea curry, it is accompanied by sweet yogurt and chutney, achieving a perfect combination of sweet, sour and spicy; it is a dish that respects tradition, but takes it to another level.
But the crunchy texture of the samosa contrasts with the smooth, spicy filling, while the sweet yogurt adds a refreshing touch that balances the flavors, and the chutney adds an extra layer of complexity to the dish.
You can enjoy your samosa with a Domaine Mathieu Cosme Vouvray Sec, a Chenin Blanc from the Loire Valley, which is the faithful companion for this dish. Its freshness and floral notes contrast with the intensity of the curry, creating a rounded experience. This step is a reminder of how in Varanasi we manage to transform traditional recipes into gastronomic gems.
The spider crab curry is one of the star dishes of this menu. With a Malabar sauce and chopped curry leaves, this dish captures the essence of South Indian flavors. This dish envelops you with its richness and depth, taking you straight to the kitchens of Kerala.
In addition, the spider crab, with its delicate meat and sea flavor, combines perfectly with the intensity of the Malabar sauce. Also, the curry leaves, with their unmistakable aroma, add a fresh and spicy touch that elevates the dish to another level. It is a dish that celebrates the richness of Indian cuisine, with its spices and its connection to the sea.
We recommend combining this dish with an Albariño Rosalía de Constantina Sotelo, from the Rías Baixas, as it provides a fresh and citric touch that balances the intensity of the curry.
The tandoor-roasted venison is the highlight of this trip, as this dish marinated in spices and smoked in aromatics is a celebration of the richness of Indian cuisine. It is accompanied by a mushroom poriyal and a spicy chocolate curry.
In addition, the venison, with its tender meat and intense flavor, is elevated by the smokiness of the tandoor and the accompanying spices. The mushroom poriyal, with its texture and earthy flavor, adds an interesting touch, while the spicy chocolate curry adds a sweet and complex flavor that rounds out the dish.
And if you combine all these flavors with a Syrah Macrobert & Canals Abbotsdale, from South Africa, with its notes of black fruits and spices, you can perfectly enjoy the intensity of the venison. It’s a dish that demonstrates how at Benares we take Indian cuisine to new horizons.
The Alphonso mango, known as the king of mangos, is the protagonist of this dessert. Its light and refreshing frozen mousse is accompanied by a sweet Petit Caligo wine , which brings notes of honey and tropical fruits; it is a sweet ending that closes the menu with a touch of freshness.
This dish is a tribute to the sweet flavors of India, reinterpreted in a contemporary style. It is the perfect closure to a menu that has been a journey of discovery and pleasure.
The menu culminates with a selection of petit fours, sn acks that sum up the essence of Benares. Each one of them is a small jewel that leaves a memory on the palate.
The Benares tasting menu is an experience that invites you to explore India through its flavors, aromas and textures. Each dish is a chapter in a story that celebrates the richness of an ancient culture, reinterpreted with mastery and passion.
If you are looking for a unique gastronomic experience, Benares awaits you with open arms. Are you ready to discover it?
