With more than ten years in Madrid and the recognition of the Michelin and Repsol guides, we invite you to discover our proposal that fuses Indian tradition with contemporary techniques.
Starting with the right starters will set the tone for your entire Benares experience. That’s why we recommend you try the Samosa Chaat, a crispy, spiced potato-filled patty that’s topped with yogurt, tamarind and mint chutneys, and garnished with fresh pomegranate.
You can’t miss the Pani Puri either, which are small crispy spheres filled with potato, chickpeas and spices, served with flavored tamarind water. Best of all, we will teach you the technique to enjoy them: fill each sphere with the liquid and enjoy it in one bite.
If you are a seafood lover, the Jhinga Til Tinka will conquer you. They are prawns marinated in spices, wrapped in a sesame crust and fried to a perfect golden brown. They are served with mango chutney, creating a perfect fusion between Indian tradition and Mediterranean products.
The heart of our kitchen is the tandoor oven, where we elevate traditional Indian techniques to an art form. You can’t miss our Chicken Tikka; in this recipe we marinate pieces of breast for hours in yogurt and a secret blend of spices, and cook them at a high temperature to achieve a lightly smoky exterior and juicy interior.
We also invite you to try our Lamb Seekh Kebab, where we knead minced lamb with fresh herbs, ginger, garlic and garam masala, mold it around skewers and cook it in our tandoor. The result is a tender texture with a complex flavor profile that we complement with our yogurt and mint sauce.
If this is your first foray into Indian curries, we recommend our Butter Chicken, a dish composed of pieces of tandoori chicken wrapped in a creamy tomato sauce, butter and aromatic spices. The balance between creaminess, acidity and a touch of sweetness makes it a favorite among our customers.
If you’re looking for a more intense experience, try the Rogan Josh. We slow cook this lamb curry with a blend of spices including cardamom, cinnamon and cloves, creating a deep, aromatic sauce that bathes tender pieces of lamb. Our version respects tradition while adding a refined touch.
We recommend you to accompany your curry with our Naan, a flat bread that we cook on the walls of the tandoor. We offer several versions of this bread, you can find the classic with garlic and fresh coriander or opt for other options such as Naan stuffed with cheese.
Our Biryani is another side dish that deserves a special mention. We simmer this saffron and spice scented rice with chicken, lamb or vegetables, and seal it with a layer of batter that we break at your table, releasing a cloud of aromas that will transport you straight to the bazaars of Delhi.
